Oil crops are grown specifically for their seeds or their fruit which are rich in fats and low in water: oil is extracted and used for food, energy or industrial purposes. The most well-known oil seeds are rapeseed, peanut, soya and sesame. Oil fruits include olives, coconuts, groundnuts and almonds. Protein crops are vegetables which are grown for their rich protein content, some of which are lentils, beans and chickpeas. They are harvested at maturity for the maximum protein content. In France the main protein crop is peas, mainly intended for animal feed (pigs, poultry).
